Two-ingredient banana oat pancakes
Soft, sweet pancakes made from banana and oats, with nothing added. Easy for a 6 month old to grip and quick enough for a weekday.
Ingredients
- 1 very ripe banana
- 40g rolled oats, blitzed to a rough flour
- 1 egg (optional, for a firmer pancake and extra protein)
- Unsalted butter or a neutral oil, for the pan
Method
- Mash the banana until almost smooth.
- Stir in the oat flour, and the egg if using, until you have a thick batter.
- Heat a little butter in a non-stick pan over medium-low heat.
- Spoon in small rounds about the size of a plum and cook for 2 to 3 minutes, until bubbles form and the edges set.
- Flip and cook for another 1 to 2 minutes, then cool completely before serving.
- Cut into strips for a 6 month old, or leave whole for an older baby to hold.
These freeze well. Make a double batch, freeze them flat with baking paper between each one, and warm one from frozen while the kettle boils.
No added sugar is needed — a very ripe banana is sweet enough, and starting without sweetened food is easier than taking it away later.
